Easy Chicken Noodle Soup From Scratch

Nothing tastes better on a chilly day then a pot of chicken noodle soup. . Campbell’s soup is ok, that is until you try this soup!

What you need:
Carrots
Celery (1-2)
Onions (1 medium)
Chicken (1 breast per 2 people)
Chicken Stock or bullion cubes (4-5 for 2 people)
Pasta (your choice — egg noodles, spaghetti or fettuccine are all good)
Salt, Pepper, Garlic ( to taste)

1. Bring water with bullion cubes (or stock) to boil, while the water heats up dice carrots, onion, and celery and add to water. Add minced garlic (3-4 cloves) and salt and pepper to pot.  I used 3 bullion cubes and 1 can chicken broth.  Allow to boil for about 15 minutes or until tender

2.While veggies are boiling dice chicken into half-inch cubes.

3. Saute 2-3 cloves garlic in olive oil skillet, add chicken, salt and pepper to taste.  Cook thoroughly.

4. Add chicken and noodles of choice to pot.

5. Boil for recommended time on noodle package.

6. Enjoy!

 

Helpful Hints:

If using a long noodle (spaghetti or fettuccine) break them into small 1″ piece before adding to boiling soup.. makes it much easier to eat!
